Stephen Bulmer of Brook Hall Cookery School in Winslow and previously Chef Director of the Raymond Blanc Cookery School, will guide you through some principles, techniques and recipes of game cookery. Following the 45 minute demonstration of the preparation of both feathered and furred game, during which you will be offered a House cocktail of sloe gin and crèmant, a four course dinner will be served in the Servants' Hall. The dinner will include two game recipes, devised by Stephen, cheese and dessert. Three different Rothschild Clarets and a Sauternes will be served.
