Academy of Culinary Arts: Chefs Adopt a School








A new and exciting addition to this years MAD Festival!


We are delighted that the Academy of Culinary Arts will be working with us this year. Founded in 1980, the Academy of Culinary Arts, is Britain's leading professional association of Head Chefs, Pastry Chefs, Restaurant Managers and suppliers.

The Chefs Adopt a School programme is the Academy of Culinary Arts' charitable long-term project which, through a 'hands-on' approach, focuses on developing an essential understanding of 'taste' and teaches children about the pleasures of eating, the provenance of ingredients and the processes by which raw materials are transformed into food. As well as providing a solid basis for learning life skills, it is hoped that this will encourage them to experiment for themselves.

This year we will be running a competition for Primary School age children to 'Design a healthy plate'. Schools are asked to encourage pupils to paint/collage/create a design on a paper plate to illustrate the health eating message of "Five a Day".

All entrants must have their exhibits to Waddesdon by Thursday 26 June for judging and exhibiting over the MAD weekend. The winners will be announced at MAD on Sunday 29 June and there will be prizes for 1st, 2nd and 3rd places.

In addition to these competitions, the chefs from the Academy of Culinary Arts will be running cookery demonstrations, including chocolate tasting and sugar craft, as well as sensory sessions - a series of taste workshops with fruit and vegetable recognition and smell and guess the herbs and spices - for full timetable see below:

Saturday 28 June
11.00 - Academy of Culinary Arts Workshop
A Sensory Session - a series of taste workshops with fruit and vegetable recognition and smell and guess the herbs and spices.

12.00 - Cookery Demonstration
Choocolate demonstrations with Sara Jayne Stanes from the Academy of Culinary Arts.

1.00 - Academy of Culinary Arts Workshop
A Sensory Session - a series of taste workshops with fruit and vegetable recognition and smell and guess the herbs and spices.

2.00 - Primary Schools Cookery Competition
Pre-selected primary school entries will be prepared and judged to win prizes.

2.45 - Presentation
Presentation and judging of entries, followed by prize giving.

3.00 - Academy of Culinary Arts Workshop
A Sensory Session - a series of taste workshops with fruit and vegetable recognition and smell and guess the herbs and spices.

4.00 - Cookery Demonstration
Aylesbury Duck!

Sunday 29 June
11.00 - Academy of Culinary Arts Workshop
A Sensory Session - a series of taste workshops with fruit and vegetable recognition and smell and guess the herbs and spices.

12.00 - Cookery Demonstration
Chocolate demonstrations with Rod Newell from Waddesdon Manor.

1.00 - Academy of Culinary Arts Workshop
A Sensory Session - a series of taste workshops with fruit and vegetable recognition and smell and guess the herbs and spices.

2.00 - Secondary Schools Cookery Competition
Pre-selected secondary school entries will be prepared and judged to win prizes.

3.00 - Academy of Culinary Arts Workshop
A Sensory Session - a series of taste workshops with fruit and vegetable recognition and smell and guess the herbs and spices.

4.00 - The Final Challenge
The final 4 teams will be set a challenege to create a healthy cold main course from a basket of mystery ingredients.

4.30 - Presentation
Presentation and judging of entries, followed by prize giving.
